Living for some days at a high altitude, breathing the pure mountain air, stimulates the appetite. Is a folk saying, but truly, after excursions, skiing and all kind of snowgames, at the evening you'll return hungry back to the hotel. The couisine staff knows how to satisfy his guests. Simplicity is the leit motiv of our cuisine.
Thanks to the experience and to an accurate selection of the primary goods, especially the vegetables and aromatic herbs that we self-cultivate in our private garden, our chefs will serve you painstaking and dainty combination with authentical and original tastes.
The dishes are those typical of the tyrolean tradition, mountain dishes full of parfumes and tastes, but most of all fresh, healthy and when possible in saison.
But you will also taste during your stay the great italian cuisine with traditional recipes from all italian regions.
The names of these dishes sound a litlle bit strange, but your palate will surely enjoy.
Starting from the dainty barley-soups and minestre (Gerstsuppe) or tripe (Saure Suppe), proceeding with the nutritius first dishes like the Schlutzkrapfen, a half mond tortello filled with spinach, the tirtlan a sort of tortelli of fried pasta filled with spinaches and ricotta, the Spätzle, tasty litlle gnocchi served together with stew and the well known Knödel, made from various saisonal ingredients.
And the meat, most of all stew (spezzatino), served with potatoes, mushrooms, Sauerkraut, and sausages, frequently produced in the malga (shepherd's huts) made from chamois's- and deer's-meats.
We must also don't forget the cheeses, also made following the most ancient and traditional techniques.
Last but not least for sure the sweets, first of all the applestrudel (Apfelstrudel), the Sacher Cake (Sachertorte), the Linzer Cake an almond pastry topped with raspberry jam and the vanilleeiscream topped with warm raspberries.
Every dishes will be washed down with exellent local wines of the best little wine producers, like the Lagrein, the St. Magdalener and the Gewürztraminer. But in our cellar don't lack also the good traditional italian and european wines.
A pleasant night will be also guaranteed by one of our many relaxing or digesting infusions made frome mountain flowers. In other words there is enough for all the tastes in order to plunge completely in the south-tyrolean tradition.
